Used throughout Japan to flavor, pickle, and preserve, miso is a cornerstone of traditional cuisine.

Made primarily from soybeans and koji (often referred to as “malted rice”),the
flavor and ingredients of each miso closely reflects local lifestyle and climate.
Miso can range in color from light white to dark, earthy browns and reds- and while southern miso varieties are traditionally sweeter, the colder northern regions are home to bolder, heartier flavors.

Yamadaya's miso is representative of the Echigo region(Niigata),a vast lowland plain famous for long winters and Japan's most fertile rice fields. Bold and fragrant, our premium and aged miso varieties use locally grown Japanese soybeans, rice, and quality Japanese sea salt.0ur family's own personally cultured proprietary yeast adds an aroma and depth of flavor that cannot be matched.

Japanese soy sauces are mild and savory, making them a great addition to any kitchen pantry. The Yamada family is proud to offer three key varieties of Japanese soy sauce.

・醇 Jun ('Pure”) is a high quality, traditionally brewed Japanese soy sauce with
a stout flavor and over120 years of history. A pure, artisan brew of soybeans, wheat, and sea salt, Jun is Yamadaya's gift from the earth.

・料理入Ryorinln (“Chef')is a premium Japanese cooking soy sauce.
Blended with a strong dashi broth of smoked bonito, Ryorinin has an intense flavor and fragrant aroma.

・華Hana (“Flower”)is a versatile table seasoning. Highly savory and especially low in sodium, Hana accentuates the natural flavor of ingredients without overpowering them. Perfect for steamed vegetables, tofu, and more.

Anlazake ( literally“ sweet sake”)is a traditional rice drink popular among adults and children of all ages.

Amazake can be served hot or cold, mixed with flavors like ginger, citrus, and
mint, or even used as a marinade or baking ingredient.
The healthy, comforting sweetness of Yamadaya's amazake is crafted entirely
from just three ingredients: glutinous rice,koj1(often called “rice malt”)and
water-nothing else. A living fermented drink has many health benefits and contains absolutely no alcohol or added sugars.

Yamadaya's quality amazake is painstakingly hand-made and hand-bottled to preserve the delicate flavor and texture of whole koji grains; this is in sharp contrast to the mass-produced, homogenized amazake sold by large manufacturers. The intact koji grains are a signature feature of Yamadaya's Classical amazake, and make for a unique and enjoyable drinking experience.

Although amazake has long been a traditional favorite both at home and at festivals throughout Japan, in recent years it has become especially trendy among famous and innovative chefs.
