Forty years ago, David Otto became a vegetarian to improve his health. He began to experiment with his Champion Juicer to create fresh juice that was alkalizing and healing. After sharing his creations with family and friends, Otto was encouraged to sell his salubrious brews to the greater Los Angeles community. In 1975, he opened a store on Santa Monica Boulevard in West Hollywood, located between Beverly Hills Health Club for Men and Beverly Hills Health Club for Women. Otto decided to follow suit and call his store Beverly Hills Juice Club, eventually shortening it to Beverly Hills Juice. In 1979, Beverly Hills Juice moved to its current location on Beverly Boulevard.

In his quest to make the most nutritionally beneficial juice, David Otto became versed in the advantages of juicing with a hydraulic press.
