Ruth Quinlan, chef of more than 15 years, cooked at groundbreaking London gastropub The Eagle in the 1990s, was head chef at Bermondsey Kitchen, Borough and the e5 Bakehouse, Hackney. In between she worked as a private chef in Ibiza for 8 years.

she will be using the best local produce to make a good value, daily-changing, fixed price menu featuring generous helpings of traditional food - mainly from Britain and The Mediterranean
