The ‘System of Governance’ was instituted in 1858 when the rule of the British East India Company was transferred to the Crown of Queen Victoria. Britain and India have been enjoying a very close relationship ever since.

The lifestyle that the British Raj had was phenomenal, especially when it came to dining. This includes a variety of items for breakfast, a quick lunch for office workers and commuters and a full dinner table surrounded by servants, cooks and butlers who were known as the Khansamas. The cooks relied on local suppliers and would then transform the food into unique, mouth-watering food that their Masters would enjoy.

This culinary art spread to households across the Indian subcontinent, and the delights of Anglo India cuisine have been enjoyed by the British Raj for over a century.

Making drinks and the art of mixology brought joy and inspiration to the East India Company’s officials. The world famous gin & tonic, fruit punches and chai flavours to name a few.

We at the East India Café take the same recipes & creations from the Khansamas, transform them with our own twist and proudly serve to our British Raj.
