Gelato ... is the Italian word for ice cream. In English it generally refers to varieties of ice cream made in a traditional Italian style. Gelato is made with milk, cream, various sugars, and flavoring such as fresh fruit and nut puree. Gelato is a type of soft ice cream containing a relatively small amount of air.

Traditional gelato has way less butterfat. Is about 4 to 8 percent of gelato is butterfat, compared to 14 percent for other made ice cream and that means gelato freezes less solidly than ice cream (and it’s actually served about 10 to 15 degrees warmer than ice cream), so it melts in your mouth easier.
