COLONIAL, EXPERIENCING THE GRAND OLD DAME ALL OVER AGAIN
Colonial Bistro Cafe is re-opening at its original site at the Ellison Building at Selegie Road. With a rich history since 1924, serving the early colonial governors enjoying the Sunday races from its rooftop, through the Second World War, this iconic location truly has a rich heritage, and has seen its fair share of glorious days and forgotten moments.

"We are excited to offer entertainment, or recreation as they will call it back in those days; that appeal to today's customers in an iconic location such as this. Many people our generation are seeking their roots these days, wondering how it was like, old buildings, lifestyles, etc. Chinese, Peranakans, travelers from Europe and UK who travel to Singapore, alike. This location started as early as the 'modern' Colonial era, and the fact that this two-storey building was once the tallest building in Singapore, still amaze many."

The interior of Colonial is spacious, welcoming and is designed to be comfortable, encouraging patrons to kick back, relax and commune with friends. Black and white tiles in a loose, checked pattern are juxtaposed against comfortable furniture of mixed designs and a slightly modern, minimalistic bar. An adjacent wing shows off an original spiral staircase in a courtyard so typical of the designs of similar buildings in that time. Here , patrons can relax in a nice setting and enjoy a free game of pool. The idea is to restore the communal purpose this site was originally popular for as well with the Colonial governors and their aristocratic friends from those years.

The menu is designed to offer a good variety without being overly complicated. Culinary quality. and the quality of the ingredients used are not left to chance. The signature Ribeye is the highlight, boasting a unique "Iced" style in its preparation to ensure the prime characteristics of the quality beef they use shine through and are delivered to the palates of the diner even when it is ordered well done. Another star in the menu is the Colonial Chicken, marrying the popular Louisiana "BBQ" and its Cajun spices with the Portuguese Peri-Peri chicken. Diners looking for accompaniment with their beers will be delighted with the array of "Bites" available, including savory beef and pork.

The Colonial Bistro Cafe is set to be the new "must-be" destination bring the best of casual dining, ice-cold beer and drinks, a relaxed atmosphere for communal recreation all under one roof. Yes, the 'roof" that was once the tallest building in Singapore. Still doubting? Go ask the Brits.
