Our Story

So, how did a cowboy from Montana end up living with Mayans, subsequently move to Cozumel and make the decision to roast and provide coffee as a Superfood. To be sure, there are countless steps in the middle and you should probably visit the coffee shop in Cozumel for the full story. The real passion began when my wife Barbara and I had possibly the best cup of coffee we’ve ever had, the beans of which were roasted by Mario Grimbaldo Morante. After two years of finding reasons to travel to Playa Del Carmen to re-visit Mario and buy more coffee, a life-changing question was posed…“Would you teach me?”

There are several opportunities to make choices in the quest to produce a great coffee (see Coffee Pyramid). All gourmet specialty coffee producers start with the best bean they can find and set their roasting profiles to taste. Mario provided the opportunity to connect with his family and the coffee farmers of the rugged Zongolica in Veracruz, to understand the roots or the “soul” of a great coffee. His favorite instruction: “The beans are now in your hands Tomas. You must set your intention to roast the best coffee possible so people will be healthy and happy when they drink your coffee. Do this before every roast.”
