Eiichi TANAKA, the apprentice of Tsukemen (dipping noodles) pioneer Kazuo YAMAGISHI , established Taisho-ken Maruichi with a vision to promote authentic Japanese Tsukemen to the world. Executive Chef Eiichi TANAKA set up his first overseas Taisho-ken in 2016 at Taikoo Shing, Hong Kong, followed by the second one at Whampoa Garden opened in August 2016, whereas most of his local branches station in Tokyo, Japan. At Taisho-ken Hong Kong, quality of the dishes are of vital importance, soup bases, noodles and ingredients are imported directly from Japan to preserve the essence of the traditional Japanese fare.
大勝軒丸一是由沾麵元祖山岸一雄入室弟子田中榮一先生創立，向以推廣日本正宗沾麵給世界為己任。分店多設於日本東京都，2016年首度衝出日本，海外的第一分店就選擇落戶於香港太古城，而第二海外分店亦已於同年8月在黃埔花園開幕，為更多食客提供美食。貫徹日本原始風味，香港店所用的湯底、麵和食材，均由日本工場直送香港，確保食物質素達至高水準。
