chardon is the first permanent project by the The Paris Popup team (Harry Cummins, Julia Mitton and Laura Vidal).

After traveling for two years and organising over 25 pop-ups in various countries, the team fell upon the lovely Provençal city of Arles and decided to purchase a restaurant/wine bar that could be their "pied-à-terre" in the south and also an open space to host chefs, bartenders and other collaborators alike.

chardon is an open space where exchange both in the food, cocktail and wine department is encouraged and desired.


Harry, the chef at the Pop-up, oversees all matters of cuisine at chardon and makes sure resident chefs are well supplied and assisted to execute their own dishes for guests' pleasure.

Laura, sommelier & front of house manager, assists de chefs in creating a tailored wine list to match the food they create.

It may happen that the Pop-up team occupies their own space or lets other chefs take the reigns for several months at a time.
