Like every Belgian kids, the founders, Florence and Thibault, used to eat « ballekes » (meatballs in Belgium) at their grandparents table. Just like the Madelaine de Proust the « ballekes » are a memory of their childlood but also the values inherited from their grandmothers such as authenticity, epicurianism, respect.
