G'day, I'm Alex the beekeeper that started the business of Hawk Hill Honey by catching wild swarms of european honey bee. My great grandfather taught my grandfather about beekeeping and my grandfather taught me.

We are located in Carindale and front onto the end of the Belmont hill and Tingalpa Reservoir Reserve's. This is an ideal location for pure honey production as our bees service the forest and bushland surrounding. This ideal location allows us to produce some unique honeys. We currently have a number of types of honey produced, with these being our summer variety, crystallised (or pre-creamed honey, you just have to whisk it), berry, citrus, creamed, cinnamon & vanilla and our manuka varieties. Prices are $10 for the summer and crystallised, $15 for the berry and creamed and $20 for the manuka honey. The current sizes of our jars is ~500-550mls or 700-750grams. For comparison's sake, we priced according to the woolworth website's average prices per 100g and reduced our prices by ~$2 for the summer/crystallised and $8 for our manuka. There is currently no comparison for our berry variety as it is not sold in the supermarkets or anywhere else for that matter.

Our method of extraction is simple, we smoke out the hives during robbing to placate the bees, then we uncap the honeycomb using a knife and the frame is then placed into our hand-cranked centrifuge to extract all of the honey (Cold extraction). From there it is poured into a food safe plastic honey bucket through a 400gal mesh strainer to remove any small particles in the honey (Although there is always a small amount of residue in wax or propolis). From there it is poured straight into our jars, no heating or pasteurizing and nothing added, just pure, raw, organic goodness.
