During a tour of the UK with my dad in 2013 we headed North to Scotland. While visiting Speyside we decided to drive around some of the Distillery's, included were Cardhu, Glenfiddich and Benromach. It was on this tour that I fell in love with Whisky and the idea of Distilling. When we got home I started reading everything I could find on distilling. It took until Early 2015, my friend Adam Hill, (yes a third Adam) told me of Fannys Bay Distillery in Northern Tasmania and the head distiller, manager and every aspect of production, Mathew Cooper. I rang Mathew one day and explained I was interested in learning more about making Whisky. He said he was doing a spirit run right now and to come up. So, I did. Mathew took me under his wing that day and has been teaching me as much as I can absorb about the industry. He has helped with every aspect of this venture and through him opened the doors to the Tas Whisky Producers Association and through them, I have been able to network and meet the movers and shakers of the Tasmanian Whisky Industry...... The next step was to find a location and start building a distillery. This is where my good mate Adam Saunders comes in. He is a fantastic builder and I was going to need one. I'd been offered an old dairy site as a potential distillery. But it was a long way out of town and I would be driving 20hrs a week in and around my shifts at work. Plus the building was going to need some serious work..... While I was complaining that this was never going to get off the ground over a few Beam Cans with Adam, he suggested one of his mates had a warehouse in Launceston that could work. It was also at this point that I realized the venture was going to be too big to do on my own. Not sure of the exact wording from that night, but after some more Beam Cans, ADAMS Distillery was formed. Since then it has been a roller coaster ride. We secured the warehouse and have sourced all our equipment. We are just waiting for the still to be finalized and paper work sorted with the ATO. then full steam ahead. In the mean time, Adam and Adam have been working our tails off, stretching the bounds of friendship by harassing the Gents at Lark for all and any tips and tricks they can bestow. Going to tastings to develop a palate. Running the numbers, again and again and again. Business Plans and paper work..... What seemed like a simple idea is in fact and insane amount of work and pressure..... but one day in the near future, when Adams Distillery is bottling our first batch, it will all be work it..... So, like this Page and follow us on our adventure, from empty warehouse to new Tasmanian Whisky Distillery.... you never know, this could be the start of something magical.......
